I call this dessert a crumble instead of a pie because it doesn't have a crust so it's a simple, quick, and healthy treat for the holidays. This recipe is loaded with high fiber foods: apples, dried cranberries, and nuts. High fiber foods may help reduce the risk of obesity, heart disease and diabetes. Ingredients
- 1/2 cup granulated sugar
- 1/2 cup whole wheat flour (regular or pastry)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla
- 2 large apples, cored & chopped but not peeled (I prefer Jonathan or Honeycrisp apples)
- 1/2 cup dried cranberries
- 1 cup walnuts or pecans, chopped
Instructions

Preheat oven to 350 degrees F. Spray a 10" pie pan with cooking spray.

In a large bowl, beat egg thoroughly with a whisk, until it forms a ribbon.

Add all the ingredients except apples and nuts, mix thoroughly with a large spoon.

Add apples and nuts, mix all together with a large spoon. Keep stiring as best as you can for 4-5 minutes. The mixture starts out very lumpy but will come together, just don't stop stiring.

Put the mixture into the pie plate and bake in the oven for 30 minutes.

Serve warm or cool. I like it plain but you can add a scoop of ice cream or vanilla yogurt.
