
A grilled cheese sandwich is a classic comfort food and so easy to prepare. All you need is cheese, butter, and bread, right? It's natural to crave comfort food because it makes us feel good and for me brings to mind pleasant childhood memories. Comfort foods like macaroni and cheese, ice cream, or chocolate CAN fit into a nutritious meal plan. Just be mindful of appropriate portion sizes and choose healthier food options most of the time.
I like to eat half a grilled cheese sandwich with a bowl of butternut squash soup or a salad. So simple, delicious, and satisfying.
Ingredients
- 2 slices sourdough bread (use any bread you prefer)
- 1.5 tablespoons Earth Balance buttery spread or butter, divided
- 2 slices cheddar cheese (I used Trader Joe's New Zealand organic sliced cheddar cheese)
Instructions

Preheat skillet over medium heat. Place a half tablespoon of butter in the skillet and let it melt.

Butter one side of a slice bread. Place bread butter-side-down in the skillet and add the slices of cheese.

Butter the second slice of bread on one side and place butter-side-up on top of the sandwich. Grill until golden brown and flip over. Continue grilling until cheese is melted. Eat right away.
