Sweet Potato Frittata

This frittata recipe is an easy, simple, protein packed brunch, lunch, or dinner dish to prepare when you have guests to impress.

  • 8 eggs
  • 1 large sweet potato, cut into ½ inch cubes
  • 1 cup sliced mushrooms, chopped
  • .5 cup fresh parsley, minced
  • 1 tbsp cooking oil (I used sunflower oil)
  • .5 tsp sea salt
  • .5 tsp ground black pepper


  1. Preheat oven to 400 degrees

  2. Place sweet potato in the microwave for 2 minutes to soften

  3. Whisk the eggs in a bowl and add the sea salt and pepper

  4. Heat an 8-10 inch skillet over medium heat and add the oil

  5. Add sweet potatoes and cook for 5 minutes

  6. Add the parsley then pour in egg mixture and stir evenly

  7. Transfer the skillet to the oven and bake 20-25 minutes

  8. Cut into wedges and serve warm.
