Watermelon is so refreshing!

One way to stay cool and hydrated during the summer months is eating a refreshing watermelon, feta cheese, and arugula salad. This sweet and savory food combination blends very nicely together. I was surprised how a simple and nutritious salad dish can be so delish! 

Here's a fun fruit fact: 

Watermelons are native to Africa and were an important souce of liquid with a 92% high water content. This juicy fruit is packed with nutrients for healthy eyes, glowing skin, and a robust immune system.

Ingredients

  • 3 cups *seedless watermelon, cubed
  • 1/2 cup crumbled feta cheese
  • 7 oz arugula, wash and pat dry
  • 1/2 small red onion, thinly sliced
  • 1/2 teaspoon salt (optional)

Instructions

  1. Place the ingredients in a large bowl and mix thoroughly.

  2. Serve immediately.
